  • 1 can (15 oz) pumpkin purée
  • 2 cloves garlic, minced
  • Juice of ½ lemon
  • ⅓ cup tahini
  • 1 tbsp pure maple syrup
  • 1 tsp kosher salt
  • 1 tsp ground cumin
  • ¾ tsp ground cinnamon
  • Pinch of cayenne pepper
  • ¼ cup olive oil
  • ¼ cup ice water

Instructions

  1. In a food processor, combine chickpeas, pumpkin purée, and garlic. Pulse until finely chopped.
  2. Add lemon juice, tahini, maple syrup, salt, cumin, cinnamon, and cayenne pepper. While blending, slowly pour in olive oil to achieve creaminess.
  3. Gradually add ice water, one tablespoon at a time, blending until smooth.
