  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a 9” square baking dish by greasing it and lining it with parchment paper.
  2. In a sauté pan, boil the apple cider until reduced by half (about 5 minutes), then whisk in the cold butter until melted.
  3. In a bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt.
  4. Incorporate the reduced cider into the wet mixture and gently stir in the flour until just combined.
  5. Pour batter into the prepared dish and bake for 22-25 minutes or until golden brown and a toothpick comes out clean.
  6. Let cool slightly before brushing melted butter on top and sprinkling with a mixture of sugar and cinnamon.
