  • 150 g unsalted butter (melted)
  • 55 g unsalted butter (melted)
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats
  • 3 tart apples (peeled, cored, sliced)
  • 50 g brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs (room temperature)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Crush the biscoff cookies and mix with melted butter. Press into the bottom of a springform pan.
  3. Bake for 10 minutes until set.
  4. Prepare the streusel by mixing melted butter, flour, brown sugar, and oats; bake until golden.
  5. Cook apple slices with brown sugar and cinnamon until tender.
  6. Beat softened cream cheese with sugar and yogurt; add eggs and spices until smooth.
  7. Layer half of the cheesecake filling over the crust, followed by half of the apples. Repeat layers.
  8. Bake in a water bath for about 50-60 minutes until set. Cool gradually before refrigerating.
