  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 1 tsp salt
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 2 tbsp cornstarch
  • 600 ml milk (whole, skimmed, lactose-free, or plant-based)
  • 50 g granulated sugar
  • 1/4 tsp salt
  • 2 tsp vanilla bean paste

Instructions

  1. Prepare the apples by peeling and slicing them thinly. Toss with sugar, salt, and cornstarch; let sit to release juices.
  2. In a pot over medium heat, cook the apple mixture until softened and fragrant.
  3. For the custard, whisk egg yolks with cornstarch, sugar, and salt. Gradually add milk while whisking. Cook over low heat until thickened.
