  • 1 Tablespoon lemon juice
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 Tablespoon corn starch
  • 2 Tablespoons water
  • 4 cups French bread, cut into ½ inch cubes
  • 2 eggs
  • ½ cup milk
  • ¼ cup cream
  • 2 Tablespoons light brown sugar
  • ½ teaspoon vanilla
  • ¾ teaspoon cinnamon
  • 2 Tablespoons melted butter
  • 3 Tablespoons maple syrup
  • ⅓ cup chopped pecans

Instructions

  1. In a saucepan, combine chopped apples with brown sugar, lemon juice, spices, and corn starch. Cook over medium heat for 5-10 minutes until apples soften.
  2. Cut French bread into small ½ inch cubes and place in a large bowl. In another bowl, whisk together eggs, milk, light brown sugar, cream, vanilla, and spices. Pour this mixture over the bread cubes and let soak for 15 minutes.
  3. Preheat oven to 350°F (175°C). Mix melted butter with maple syrup and chopped pecans for the topping.
  4. Fill muffin pan cavities with soaked bread mixture, press down gently, spoon in apple filling, and top with pecan mixture.
  5. Bake for about 10 minutes, add topping, then bake for another 12-15 minutes until golden brown.
