  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked chicken sausage (or plant-based sausage)
  • 5 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat your oven to 200°C. Toss butternut squash with olive oil, salt, and pepper; roast on a parchment-lined baking sheet for 15–20 minutes until golden.
  2. Toss Brussels sprouts with olive oil, salt, and pepper; roast alongside squash until tender-crisp.
  3. Cook bow tie pasta in salted boiling water according to package directions; reserve some pasta water before draining.
  4. In a skillet over medium heat, brown sliced chicken sausage; remove from skillet.
  5. In the same skillet, sauté minced garlic in olive oil until fragrant. Add butter and cooked pasta; mix well.
  6. Combine roasted vegetables and sausage back into the skillet; adjust seasoning as needed with salt and pepper.
