  • 1 lb ground beef
  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cups low-sodium beef broth
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 3 tbsp butter
  • Fresh parsley (optional), chopped

Instructions

  1. Sauté diced onion with 1 tbsp of butter in a skillet over medium heat for 3–4 minutes.
  2. Add ground beef and cook until browned; drain excess fat.
  3. Stir in minced garlic and cook for another minute.
  4. Add uncooked rice, beef broth, Italian seasoning, salt, and pepper; mix well.
  5. Bring to a boil, then reduce heat to low and simmer covered for 18–20 minutes.
  6. In a separate saucepan, melt remaining butter and stir in cheddar cheese, Parmesan cheese, and milk until smooth.
  7. Once rice is tender, combine with the cheese sauce in the skillet; mix until creamy.
  8. Cook uncovered for an additional few minutes before serving with fresh parsley if desired.
