  • 3 oz cooking oil
  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/4 cups chocolate chips (divided)
  • Oil spray

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
  3. In another large bowl, mix cooking oil, eggs, sugar, vanilla extract, and pumpkin puree until combined; stir in one cup of chocolate chips.
  4. Fold the dry ingredients into the wet mixture gently until just blended.
  5. Spray an 8” x 4” loaf pan with oil spray and pour in the batter; sprinkle remaining chocolate chips on top.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool before slicing.
