  3. In another bowl, beat eggs and sugar until smooth; add oil, buttermilk, lemon zest, and juice.
  4. Shred zucchini finely and fold into wet ingredients.
  5. Combine dry and wet mixtures carefully until just blended.
  6. Pour batter into the prepared pan and bake for about 30 minutes or until a toothpick comes out clean.
