  • 1 homemade double pie crust (2 sheets of pie dough)
  • 5 pounds apples (mix of Granny Smith, Gala, and Golden Delicious)
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 5 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 & 1/2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • 1/2 teaspoon cardamom (optional)
  • 1/4 teaspoon kosher salt
  • juice from half a lemon (2 tablespoons)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Core, peel, and slice the apples into 1/8 inch pieces. Toss with lemon juice to prevent browning.
  3. In a skillet over medium heat, combine apples with brown sugar, granulated sugar, flour, salt, and spices. Cook for about 20 minutes until tender but not mushy.
  4. Stir in vanilla extract and cool the filling.
  5. Roll out the pie crusts and fit one into a deep pie dish.
  6. Pour the cooled apple mixture into the crust and cover with the second crust; vent as desired.
  7. Chill for 20–30 minutes before baking.
  8. Brush with milk or beaten egg and sprinkle raw sugar on top.
  9. Bake for 15 minutes at 425°F; then lower to 350°F (175°C) and bake for an additional 40–45 minutes until golden brown.
