Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat and sear each piece for about 5-7 minutes on each side until golden brown. Remove from the pan.
  2. In a saucepan, bring chicken broth and a pinch of salt to a boil. Add long-grain rice, reduce heat, cover, and simmer for about 15-20 minutes until tender.
  3. In the same skillet used for the chicken, melt butter over medium heat. Whisk in flour to create a roux, then gradually pour in whole milk and additional broth while stirring until smooth. Stir in garlic powder and thyme before adding cheddar and Parmesan until melted.
  4. Return cooked chicken to the skillet, spoon sauce over it, and serve over rice.
