  • 1 1/2 cups granulated sugar
  • 2 ounces cream cheese (room temperature)
  • 7 tablespoons unsalted butter (melted)
  • 1/4 cup apple juice (as bourbon substitute)
  • 1 large egg
  • 1 1/2 teaspoons pure vanilla extract
  • 8 ounces toffee chips
  • 1/2 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate bowl, beat cream cheese and sugar until smooth. Mix in melted butter, apple juice, egg, and vanilla extract until creamy.
  4. Gradually add dry ingredients to the wet mixture until just combined. Fold in toffee chips and pecans.
  5. Chill the dough for at least two hours.
  6. Scoop rounded dough onto prepared baking sheets and bake for 12-15 minutes until golden around the edges.
  7. Cool on the baking sheet for a couple of minutes before transferring to a wire rack.
