  • 3 3/4 cups cake flour

  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 5 tablespoons unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 1 teaspoon cinnamon
  • 2 tablespoons cake flour
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 3 tablespoons unsalted butter (melted and cooled)
  • 2 1/2 tablespoons milk

Instructions

  1. Cream together unsalted butter, granulated sugar, and brown sugar until fluffy. Mix in eggs and vanilla.
  2. In a separate bowl, whisk cake flour, cornstarch, baking soda, baking powder, and salt. Gradually combine with wet ingredients.
  3. Chill dough in the refrigerator for 1 hour.
  4. Prepare the filling by mixing softened butter, brown sugar, cinnamon, and cake flour until smooth.
  5. Shape cookies by taking portions of dough and placing filling in between two layers of dough; seal edges.
  6. Bake at 350°F (175°C) for 11-13 minutes until lightly golden.
  7. Cool cookies before drizzling with glaze made from powdered sugar, cinnamon, melted butter, and milk.
