  • 3 cups (333g) cake flour
  • 1 cup (200g) granulated sugar
  • 1 cup (200g) light brown sugar, firmly packed
  • 1 tsp baking powder
  • ½ tsp baking soda

  • 1 ½ cups (354ml) buttermilk, room temperature preferred
  • 2 large eggs, room temperature preferred
  • 1 ½ tsp vanilla extract
  • 1 ½ cups (160g) pecan halves, very finely chopped
  • 1 ½ cups (340g) unsalted butter, softened
  • 6 oz cream cheese, softened
  • ⅓ cup (66g) light brown sugar, firmly packed
  • 1 ½ tsp vanilla extract
  • ¼ tsp salt
  • 4 ½ cups (562g) powdered sugar
  • 1 tbsp heavy cream
  • ⅓ cup (35g) pecan halves, very finely chopped, optional

Instructions

  1. Brown the butter by melting it in a saucepan over medium-low heat until golden and nutty. Allow it to cool completely.
  2. Preheat your oven to 350°F (175°C) and grease three 8-inch round pans.
  3. In a mixing bowl, whisk together cake flour, sugars, baking powder, baking soda, and salt.
  4. Blend the cooled browned butter into the dry ingredients until combined.
  5. In another bowl, mix buttermilk, eggs, and vanilla; then gradually add it to your batter until just combined.
  6. Fold in finely chopped pecans gently.
  7. Divide batter among the prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  8. Cool cakes in pans before transferring them to wire racks.
  9. For icing: Beat softened butter and cream cheese together; add brown sugar, vanilla, salt, powdered sugar, and heavy cream until smooth and fluffy.
  10. Once cakes are cool, layer and frost with icing; garnish with additional pecans if desired.
