  • 1 1/2 pounds butternut squash (peeled, seeded, cubed)
  • 2 gala apples (peeled, cored, diced)
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons brown sugar (or honey)
  • 2 tablespoons butter (chopped)
  • 1/4 cup raisins
  • 1/4 cup pecans (or walnuts)
  • 1/4 cup dried cranberries
  • Salt and black pepper to taste

Instructions

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. In a large bowl, combine butternut squash cubes, diced apples, cinnamon, vanilla extract, and brown sugar. Mix well.
  3. 3. Season with salt and pepper; stir again.
  4. 4. Pour the mixture into a baking dish and dot with chopped butter.
  5. 5. Cover and bake for 15 minutes.
