  • 200g cheese (cheddar or similar), sliced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh parsley leaves, chopped
  • 2 garlic cloves, crushed
  • 3 tbsp extra virgin olive oil
  • 2¼ cups plain flour
  • 1 tsp baking soda (or substitute with baking powder)
  • ½ cup plain yogurt
  • ¾ cup full-fat milk
  • 2 large eggs
  • 50g unsalted butter, melted

Instructions

  1. Preheat oven to 180°C (350°F) and prepare a greased loaf pan.
  2. In a bowl, combine herbs, crushed garlic, olive oil, and salt to create an herb mixture.
  3. In another bowl, whisk flour, baking soda (or powder), and salt together.
  4. In a separate bowl, mix yogurt, milk, eggs, melted butter, and additional garlic until smooth.
  5. Combine wet and dry ingredients gently; avoid overmixing.
  6. Layer one-third of the batter in the prepared pan; dollop one-third of the herb mixture and sprinkle one-third of cheese slices over it. Repeat twice more.
  7. Bake for about 30 minutes; cover with foil and bake for another 20 minutes. Let cool before slicing.
