  • 2 slices of sourdough or artisan bread
  • 1/2 ripe avocado, mashed
  • 1/2 cup cooked shredded chicken
  • 2 slices of cheddar or Monterey Jack cheese
  • 1 tbsp mayonnaise or aioli (optional)
  • 1 tsp lemon juice
  • 1 tbsp butter (for toasting)
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mash the avocado with lemon juice, salt, and pepper until creamy.
  2. Spread mayonnaise (if using) on one side of each bread slice. Generously spread the avocado mixture on one slice.
