  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 packet fajita seasoning
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil for sautéing vegetables
  • 1 large onion, sliced thinly
  • 3 bell peppers, sliced thinly
  • 1.5 cups uncooked long-grain white rice
  • 3 cups chicken broth or water
  • 1 tablespoon butter or olive oil (optional)
  • ½ teaspoon salt (if using water)
  • Optional toppings: sour cream, guacamole, salsa, shredded cheese, fresh cilantro, lime wedges, pickled jalapeños

Instructions

  1. Marinate the chicken by mixing olive oil, lime juice, fajita seasoning, smoked paprika, cumin, salt, and pepper in a large bowl. Add chicken strips and toss to coat. Allow to marinate for 15-30 minutes.
  2. In a medium pot over medium heat, bring chicken broth to a boil. Add rice and cover; cook according to package instructions until fluffy.
  3. Heat olive oil in a skillet over medium-high heat. Sauté sliced onions until translucent (3-4 minutes), then add bell peppers and stir-fry until slightly softened.
