  • 10-ounce package frozen spinach, thawed and squeezed dry
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the penne pasta according to package directions until al dente. Drain and reserve about ½ cup of pasta water.
  2. In a large skillet over medium-high heat, heat olive oil. Season chicken with salt and pepper and cook until browned and cooked through (about 5-7 minutes). Remove from skillet.
  3. Add chopped onion to the skillet and sauté for about 5 minutes until softened; then add minced garlic.
  4. Stir in thawed spinach and cook until heated through (about 2 minutes).
  5. Pour in chicken broth and heavy cream; bring to a gentle simmer until slightly thickened.
  6. Mix in Parmesan cheese; then return cooked chicken and penne to the skillet, tossing gently to combine. Adjust consistency with reserved pasta water if needed.
