  • 2¼ cups vanilla wafer crumbs (or graham cracker crumbs)
  • ¼ cup brown sugar
  • ½ cup unsalted butter, melted
  • 1 cup mascarpone cheese
  • ½ cup confectioner’s sugar
  • 1½ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • Zest of 1 lemon
  • 1 cup whole milk ricotta cheese
  • ¾ cup heavy whipping cream
  • 1⅓ cups mini chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine the vanilla wafer crumbs and brown sugar. Add melted butter and mix well. Press into a pie dish and bake for 10 minutes until golden. Cool completely.
  2. In another bowl, beat mascarpone cheese, confectioner’s sugar, vanilla extract, ground cinnamon, and lemon zest until smooth. Gently fold in ricotta cheese.
  3. Whip the heavy cream until soft peaks form and fold into the cheese mixture.
  4. Spread half the filling in the cooled crust, sprinkle with one-third of the chocolate chips, then add more filling on top and finish with remaining chocolate chips.
  5. Cover with plastic wrap and refrigerate for at least 8 hours or overnight.
