  • 1 cup all-purpose flour
  • ¼ cup cocoa powder
  • ½ cup olive oil
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs (room temp)
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 cup ripe bananas (mashed)
  • ½ cup dark chocolate chips
  • ½ cup semi-sweet chocolate chips
  • 1 tsp baking soda
  • ½ tsp kosher salt
  • ½ tsp espresso powder
  • 1 tbsp all-purpose flour (for dusting chocolate chips)
  • ¼ banana (2 long thin slices off of a banana)
  • 1 tsp granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, kosher salt, and espresso powder.
  3. In another bowl, combine olive oil, brown sugar, granulated sugar, eggs, vanilla extract, sour cream, and mashed bananas until smooth.
  4. Gradually mix dry ingredients into wet ingredients until just combined.
  5. Fold in dusted chocolate chips gently.
  6. Pour half the batter into the prepared loaf pan; add extra chocolate chips on top before covering with remaining batter and garnishing with banana slices sprinkled with sugar.
  7. Bake for about 55 minutes or until a toothpick inserted comes out clean.
  8. Let cool before slicing to enjoy.
