  • ¾ cup sour cream
  • ¾ cup heavy cream
  • 4 eggs
  • 1 box chocolate cake mix
  • ¼ cup cocoa powder
  • 2 cups butter (cold, cut into chunks)
  • 10 cups powdered sugar
  • 2 tbsp vanilla extract
  • Green gel food coloring
  • Golden star sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, blend vegetable oil, sour cream, heavy cream, and eggs until well mixed. Gradually add in the chocolate cake mix, cocoa powder, and optional espresso powder until just combined.
  3. Fill cupcake liners two-thirds full with batter and bake for about 15 minutes or until a toothpick comes out clean. Cool completely.
  4. For the frosting, beat cold butter until fluffy. Gradually add powdered sugar, heavy cream, vanilla extract, and a pinch of salt. Mix in green gel food coloring.
  5. Decorate cooled cupcakes by piping on green frosting and topping with golden star sprinkles.
