  • 3 cups bread flour
  • 1/4 tsp active dry yeast
  • 1 1/4 tsp coarse salt
  • 1 2/3 cup warm water
  • Pear (thinly sliced)
  • Pearl onions (halved)
  • Cherry tomatoes (halved)
  • Thinly sliced red onion
  • Fresh rosemary sprigs
  • Coarse salt
  • Olive oil

Instructions

  1. Combine flour, yeast, and salt in a bowl. Add warm water and mix until shaggy.
  2. Cover the bowl with plastic wrap and let it sit for at least 12 hours.
  3. Drizzle olive oil in a casserole dish and transfer your risen dough into it. Dimple the dough and drizzle more olive oil on top. Let it rest for another 2 hours.
  4. Preheat oven to 400°F (200°C). Decorate the dough with rosemary, pear slices, cherry tomatoes, and pearl onions.
  5. Sprinkle with coarse salt and bake for about 25 minutes or until golden brown.
  6. Allow to cool slightly before slicing and serving.
