  • 3 ½ lbs beef chuck, cut into 2" pieces
  • 4 tablespoons unsalted butter, divided
  • 1 yellow onion, chopped
  • 3 large carrots, peeled and chopped
  • 5 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 3 tablespoons all-purpose flour
  • 2 cups bold apple vinegar
  • 2 cups beef stock
  • 1 tablespoon beef bouillon
  • Fresh thyme
  • Bay leaves
  • Frozen pearl onions
  • 16 oz cremini mushrooms, quartered

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large Dutch oven over medium-low heat, melt bacon until crisp; remove and set aside.
  3. Season beef with salt and pepper; sear in batches until browned on all sides.
  4. Sauté onions and carrots in remaining butter until softened; add garlic and tomato paste.
  5. Pour in apple vinegar to deglaze the pot, scraping up browned bits; stir in beef stock and bouillon.
  6. Return bacon and beef to the pot along with thyme and bay leaves; cover tightly and bake for about 2.5 hours.
  7. Add sautéed mushrooms and pearl onions; return to the oven for another 45 minutes until tender.
