  • 16 oz cream cheese
  • 1 cup powdered sugar
  • 2 boxes (3.4 oz each) instant coconut cream pudding mix
  • 3 cups half-and-half
  • 8 oz Cool Whip
  • 1 cup toasted shredded coconut

Instructions

  1. Prepare the crust by combining graham cracker crumbs, sugar, and melted butter in a bowl. Press firmly into a 9×13-inch pan.
  2. Beat softened cream cheese and powdered sugar until smooth; mix in coconut extract and fold in half of the Cool Whip. Spread over the crust.
  3. Whisk together pudding mix and half-and-half until thickened; pour over the cream cheese layer.
  4. Spread remaining Cool Whip on top and sprinkle with toasted coconut.
  5. Cover and chill in the refrigerator for at least six hours before serving.
