  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, heat olive oil; sauté diced onion and bell pepper until soft (3–4 minutes).
  3. Add chopped spinach to the skillet; cook until wilted (2–3 minutes). Season with garlic powder, salt, and pepper. Remove from heat.
  4. In a large bowl, whisk together eggs, milk, and cottage cheese until smooth. Stir in Italian seasoning and additional salt and pepper.
  5. Fold in sautéed vegetables and shredded cheese until well combined.
  6. Grease a 9-inch pie dish with cooking spray or olive oil; pour in the mixture evenly.
  7. Bake for 40–45 minutes until golden brown on top and set in the center.
  8. Let cool for 5–10 minutes before slicing. Serve warm or at room temperature.
