  • 15.5 oz. black beans, drained and rinsed
  • 15.5 oz. black-eyed peas, drained and rinsed
  • 15 oz. sweet corn, drained
  • 1 cup fresh cilantro, chopped
  • ½ cup red bell pepper, diced
  • ½ cup orange bell pepper, diced
  • ½ cup red onion, diced
  • 1 tsp. chili powder
  • ½ tsp. kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white apple vinegar
  • 1 tbsp. fresh lime juice
  • ¼ tsp. garlic powder

Instructions

  1. Prepare the beans and corn by draining and rinsing them thoroughly to remove excess sodium.
  2. In a large bowl, mix the drained beans and corn with chopped cilantro, diced red bell pepper, orange bell pepper, and red onion.
  3. In another bowl, whisk together chili powder, kosher salt, granulated sugar, olive oil, white apple vinegar, lime juice, and garlic powder until smooth.
  4. Pour the dressing over the bean mixture and stir gently until well coated.
  5. Refrigerate for at least 30 minutes to allow flavors to meld before serving.
