  • 11/2 lbs Little Potatoes Company White Creamer potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Chopped fresh parsley

Instructions

  1. Poke each creamer potato with a fork and microwave in a bowl for 4 minutes. Flip and microwave for another 4 minutes until tender.
  2. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. In a mixing bowl, toss microwaved potatoes with olive oil, salt, and pepper until coated.
  4. Place potatoes on the baking sheet and gently smash each one to about 3/8” thick.
  5. Bake for 6 minutes on one side, flip them over, and bake for another 6 minutes until golden and crispy.
  6. Remove from oven and sprinkle with chopped parsley before serving.
