  • 16 oz cream cheese
  • ¾ cup unsalted butter
  • 2 large eggs
  • Fresh lemon juice and zest from 1 lemon
  • Granulated sugar
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. Combine graham cracker crumbs, flour, sugar, and salt in a bowl. Stir in melted butter until mixed.
  3. Press two-thirds of the crumb mixture into the bottom of the prepared pan.
  4. In another bowl, beat softened cream cheese until smooth. Add sugar, eggs one at a time, lemon juice, zest, and vanilla extract; mix until silky.
  5. Pour the filling over the crust and sprinkle with remaining crumb mixture.
  6. Bake for 30–35 minutes until the center is set but slightly jiggly.
  7. Cool at room temperature for one hour then refrigerate for at least three hours before slicing.
