  • 1 large sweet onion, chopped
  • 34 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 ½ pounds boneless chicken breast
  • 30 ounces canned cannellini beans, drained
  • 7 ounces canned chopped green chiles
  • 1 cup frozen corn
  • 4 cups chicken broth
  • 8 ounces cream cheese

Instructions

  1. In a large pot over medium heat, melt the butter. Add chopped onion and minced garlic; sauté until the onion turns translucent.
  2. Stir in ground cumin and dried oregano. Add whole boneless chicken breast to the pot.
  3. After about 5 minutes, pour in drained cannellini beans, green chiles, and chicken broth.
  4. Mix in frozen corn and bring everything to a gentle boil. Reduce heat to low, cover, and simmer for about 20 minutes.
  5. Remove cooked chicken breast, shred it using two forks, then return it to the pot. Incorporate cream cheese until melted and creamy.
