- 4 small to medium chicken breasts (or 2 large halved)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3–4 cloves garlic, minced
- 1 cup light cream or heavy cream
- 1 tablespoon Italian seasoning or oregano
- 1/2 cup parmesan cheese, grated
- 1 cup spinach, chopped (optional)
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and cook chicken for 5-6 minutes on each side until golden brown.
- Remove chicken from skillet and set aside.
- Lower heat, add minced garlic to the skillet, and sauté for about 30 seconds.
- Pour in cream while stirring; add Italian seasoning and parmesan cheese until smooth.
- Stir in spinach if using; simmer for 2-3 minutes.
- Return chicken to the pan, spoon sauce over it, and simmer together for one minute.
- Serve hot with your preferred sides.
