  • 1/4 cup all-purpose flour

  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1/4 teaspoon sesame oil
  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1/4 teaspoon salt
  • 1 avocado, sliced

Instructions

  1. Press the tofu to remove excess moisture, then cut into cubes.
  2. In a bowl, mix cornstarch, flour, garlic powder, salt, and pepper. Coat tofu cubes evenly in this mixture.
  3. Heat oil in a skillet over medium-high heat. Cook coated tofu until golden brown and crispy on all sides (about 5-7 minutes).
  4. In a small bowl, whisk together soy sauce, rice vinegar, honey, minced garlic, and sesame oil for the teriyaki sauce.
  5. Cook brown rice in boiling vegetable broth with salt according to package instructions (15-20 minutes).
  6. Assemble by layering rice in a bowl, topping with avocado slices and crispy tofu. Drizzle with teriyaki sauce.
