  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1 cup wild rice blend
  • 3 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 1/4 cup low-sodium soy sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Chop the onion finely and rinse the wild rice under cold water.
  2. Layer the chicken breasts at the bottom of your crockpot, followed by the chopped onion.
  3. Sprinkle the rinsed wild rice over the chicken and onions.
