  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cups flour
  • 1/4 tsp salt
  • 3/4 tsp baking powder
  • 3 oz softened cream cheese
  • 1/2 cup brown sugar
  • 5 oz pumpkin puree
  • 2/3 cup heavy cream (cold)
  • 1 tbsp white sugar
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • orange gel food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together softened butter, oil, granulated sugar, and powdered sugar until smooth.
  3. Add the egg and vanilla extract; mix until well combined.
  4. Gradually add flour, salt, and baking powder; mix until just combined.
  5. Scoop out dough onto the baking sheet, flatten slightly, and create space in the center for filling.
  6. Bake for 8-9 minutes until edges are golden. Allow cooling before transferring to wire racks.
