  • ½ white or yellow onion
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • Freshly ground black pepper
  • ½ cup gruyere cheese
  • ¼ cup grated parmesan
  • Fresh chopped parsley

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 2-quart baking dish.
  2. Layer thinly sliced potatoes and onions in the dish.
  3. In a saucepan, melt butter and whisk in flour; gradually add almond milk until smooth.
  4. Stir in cheddar cheese, garlic powder, salt, and pepper until thickened.
  5. Pour the cheese sauce over the potatoes and cover with foil.
  6. Bake for 45 minutes; then sprinkle gruyere and parmesan on top and bake uncovered for an additional 30-45 minutes until golden brown.
