  • 67 medium Yukon Gold potatoes (about 3 pounds), thinly sliced
  • ½ white or yellow onion, sliced
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1½ cups unsweetened almond milk (or any milk of your choice)
  • 8 ounces sharp cheddar cheese, shredded
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • Freshly ground black pepper
  • ½ cup gruyere cheese (or more sharp cheddar) for topping
  • ¼ cup grated parmesan for topping
  • Fresh chopped parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a 2-quart baking dish with nonstick spray or grease lightly.
  3. Layer the sliced potatoes in the dish, sprinkling onion slices between layers.
  4. In a saucepan over medium heat, melt butter and whisk in flour. Gradually add almond milk while stirring until thickened.
  5. Stir in cheddar cheese, garlic powder, salt, and pepper until smooth.
  6. Pour the cheese sauce evenly over the potatoes.
  7. Cover with foil and bake for 45 minutes.
  8. Remove foil, top with gruyere and parmesan, then bake uncovered for an additional 30-45 minutes until golden brown.
