  • 1 cup sliced and toasted almonds
  • 1 cup dried cranberries
  • 1/4 cup white grape juice vinegar
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons granulated sugar
  • 1/2 cup olive oil
  • 3 tablespoons honey
  • 1 tablespoon finely chopped shallot

Instructions

  1. Prepare the dressing by whisking together white grape juice vinegar, apple cider vinegar, granulated sugar, olive oil, honey, and shallot in a bowl until well blended.
  2. In a large bowl, combine fresh baby spinach, sliced and toasted almonds, and dried cranberries. Gently toss to mix.
  3. Just before serving, drizzle half of the prepared dressing over the salad and toss gently to coat.
  4. Add more dressing if needed and finish with toasted sesame seeds or poppy seeds on top.
