  • ¾ cup unsweetened cocoa powder
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 cup buttermilk
  • 8 oz semisweet chocolate
  • 2 cups heavy whipping cream
  • 2 tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 1 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 6 oz bittersweet chocolate
  • ¾ cup heavy cream (for ganache)
  • 1 tbsp light corn syrup
  • 1 tbsp butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your cake pans.
  2. In a bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix eggs, vegetable oil, buttermilk, and hot coffee until combined.
  4. Fold the wet mixture into the dry ingredients until smooth.
  5. Divide the batter between pans and bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.
  6. Melt semisweet chocolate and allow it to cool slightly.
  7. In a separate bowl, whip heavy cream with powdered sugar and vanilla until stiff peaks form.
  8. Fold the melted chocolate into the whipped cream gently until well combined.
  9. Layer the cooled cakes with mousse in between each layer and refrigerate for at least three hours or overnight.
  10. Prepare ganache by heating heavy cream and pouring it over chopped bittersweet chocolate; stir until smooth.
  11. Pour ganache over the chilled cake before serving.
