  • 1 pound lean ground beef
  • 1½ cups cooked brown rice
  • 14.5 ounces diced tomatoes (canned)

  • 1 teaspoon dried oregano
  • 2 teaspoons paprika
  • 7 large bell peppers (tops and cores removed)
  • 1 cup shredded cheddar jack cheese

Instructions

  1. Preheat your oven to 375°F.
  2. Prepare the bell peppers by placing them cut side up in a baking dish.
  3. In a pan, heat olive oil over medium heat and sauté the diced onion until softened. Add minced garlic and cook until fragrant.
  4. Add the ground beef to the pan; cook until browned, breaking it apart as it cooks.
  5. Mix in cooked brown rice, diced tomatoes, tomato paste, oregano, paprika, salt, and pepper; let simmer for about 5 minutes.
  6. Stuff each bell pepper with the beef mixture and bake for 10-12 minutes until tender.
