  • 3 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper, to taste
  • 6 slices of baguette or crusty bread, toasted
  • 1 1/2 cups shredded Gruyère or Swiss cheese

  1. Heat olive oil in a large pot over medium-high heat. Sear the beef short ribs until browned on all sides.
  2. In the same pot, add unsalted butter and sliced onions; cook low and slow until golden brown (about 30 minutes).
