  • 2 cups fresh strawberries, chopped (for jam)
  • 1 tablespoon granulated sugar (for jam)
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 6 fresh strawberries, halved (for garnish)

Instructions

  1. Prepare the tartlet shells by cutting Pâte Sucrée dough into portions and pressing into tartlet pans. Chill for 15-30 minutes.
  2. Preheat oven to 375°F. Prick dough with a fork, line with parchment paper, and fill with pie weights. Bake until golden brown.
  3. Make strawberry jam by cooking chopped strawberries and sugar until thickened.
  4. Prepare the pastry cream by combining milks and sweetened condensed milk over medium heat, then tempering egg yolks with cornstarch before whisking into the hot mixture until thickened.
  5. Assemble by spreading cooled strawberry jam in each shell, piping on pastry cream, and garnishing with fresh strawberries.
