  • 2 tablespoons olive oil
  • 4 cloves garlic (chopped)
  • 1 medium onion (minced)
  • 1/2 cup chicken stock or white grape juice
  • Zest and juice of 1 medium lemon
  • 4 tablespoons butter (divided)
  • 2 tablespoons chopped parsley
  • Chili flakes, salt, and pepper to taste

Instructions

  1. Clean the mushrooms and trim any dried stems. Keep them whole.
  2. Heat olive oil in a skillet over medium-high heat. Add mushrooms and sauté until browned.
  3. Stir in butter, minced onions, and garlic; cook until caramelized.
  4. Pour in chicken stock (or grape juice), lemon zest, juice, and chili flakes. Simmer for two minutes.
  5. Finish with remaining butter and parsley; season with salt and pepper before serving warm.
