- 2 tablespoons olive oil
- 4 cloves garlic (chopped)
- 1 medium onion (minced)
- 1/2 cup chicken stock or white grape juice
- Zest and juice of 1 medium lemon
- 4 tablespoons butter (divided)
- 2 tablespoons chopped parsley
- Chili flakes, salt, and pepper to taste
- Clean the mushrooms and trim any dried stems. Keep them whole.
- Heat olive oil in a skillet over medium-high heat. Add mushrooms and sauté until browned.
- Stir in butter, minced onions, and garlic; cook until caramelized.
- Pour in chicken stock (or grape juice), lemon zest, juice, and chili flakes. Simmer for two minutes.
