  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil

Instructions

  1. Wash and halve the baby potatoes. Mince the garlic.
  2. Rub chicken breasts with olive oil, then season with Italian seasoning, salt, black pepper, and optional red pepper flakes.
  3. Layer halved potatoes in the bottom of the crockpot, then place seasoned chicken on top.
  4. Pour chicken broth over the chicken and potatoes.

  6. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken reaches an internal temperature of 165°F (75°C) and potatoes are fork-tender.
