  • 1 large bulb of garlic
  • 1.3kg (2.8lb) baking potatoes
  • 5 tbsp (75g) butter
  • 2 tbsp heavy cream
  • 60g (3/4 cup) freshly grated Parmesan cheese
  • 4 large egg yolks
  • Olive oil, salt, and pepper

Instructions

  1. Roast the garlic by slicing off the tip and drizzling with olive oil. Wrap in foil and bake at 180C (356F) for 50-60 minutes until soft.
  2. Peel and dice the baking potatoes; boil in salted water until fork-tender (about 15-20 minutes). Drain and let steam dry.
  3. Mash the potatoes with roasted garlic, butter, cream, salt, and pepper until smooth. Mix in egg yolks once slightly cooled.
  4. Pipe the mixture onto a lined baking sheet in swirled domes.
  5. Drizzle melted butter over each dome and bake at 200C (400F) for 15-20 minutes until golden brown.
