  • lbs sirloin steak, cut into bite-sized cubes
  • lbs baby potatoes, halved or quartered
  • 4 tablespoons olive oil
  • 4 tablespoons butter
  • 56 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian herbs
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add halved baby potatoes, season with salt, pepper, and paprika. Cook for about 15 minutes until golden brown and fork-tender; set aside.
  2. Season steak cubes with salt, pepper, and Italian herbs. In the same skillet, add 1 tablespoon of olive oil and 2 tablespoons of butter. Sear steak in batches for about 2–3 minutes on each side until browned.
  3. Reduce heat to medium-low, add remaining butter and minced garlic to the pan. Sauté for about 1 minute until fragrant. Return the crispy potatoes to the skillet and toss gently.
  4. Warm through for another minute or two on low heat before serving hot with fresh parsley sprinkled on top.
