  • ½ batch rough puff pastry or classic puff pastry (or store-bought)
  • 1 cup fig jam
  • ½ cup prepared caramelized onions, roughly chopped
  • 4 ounces goat cheese
  • Fresh thyme sprigs

Instructions

  1. Preheat the oven to 400ºF (200ºC) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a floured surface to about ⅛-inch thickness. Cut out at least 16 circles.
  3. Dock each circle with a fork or smaller cutter to prevent excessive rising.
  4. Chill the assembled tarts in the freezer for about 10 minutes.
  5. Bake for 12 minutes until puffy but not golden.
  6. Press down any puffed areas, then add fig jam and goat cheese on top.
  7. Bake for an additional 5-8 minutes until golden brown.
  8. Cool slightly before garnishing with fresh thyme before serving.
