  • 5g salt, plus more to taste
  • 42g unsalted butter, cubed
  • 5g fresh thyme, chopped
  • Black pepper, to taste

  2. Add cauliflower florets, reduce heat to low, cover, and steam for about 20 minutes until fork-tender.
  3. Transfer steamed cauliflower to a food processor using a slotted spoon.
  4. In the same pot, whisk cubed butter into about 3 tablespoons of hot broth until smooth.
  5. Pour the butter mixture into the food processor along with thyme and black pepper; blend until completely smooth.
