  • 1/2 cup breadcrumbs
  • 1/4 cup nutritional yeast (or grated Parmesan cheese)
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, nutritional yeast, egg, garlic, parsley, mint, oregano, salt, and pepper. Mix until just combined.
  2. Form the mixture into 1-inch meatballs.
  3. Heat olive oil in a skillet over medium heat. Cook meatballs for 10-12 minutes until browned and cooked through.
  4. Meanwhile, boil vegetable broth in a pot. Add orzo and cook according to package instructions (8-10 minutes).
  5. Drain excess liquid from the orzo and mix in lemon zest and juice along with salt and pepper.
