  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes
  • 1 cup cottage cheese
  • 1 yellow onion
  • 2 tbsp olive oil
  • 1 taco seasoning packet
  • 2 tbsp hot honey
  • 1 avocado
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F. Toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on a baking sheet and roast for 40–45 minutes until tender and golden.
  2. In a skillet over medium heat, add olive oil and diced onion; cook until softened (about 5 minutes). Add ground beef and taco seasoning; cook until browned.
  3. In serving bowls, layer roasted sweet potatoes, seasoned beef, avocado slices, and cottage cheese.
  4. Drizzle hot honey over each bowl before serving.
