  • 2 medium sweet potatoes (peeled and diced)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 red bell pepper (diced)
  • 1 cup spinach (fresh or frozen)
  • 1 cup low-sodium chicken broth
  • 1 tbsp olive oil
  • smoked paprika
  • ground cumin
  • chili powder
  • salt
  • pepper
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onion and minced garlic for about 2-3 minutes until fragrant.
  3. Add ground turkey to the skillet and cook until browned (approximately 5-7 minutes). Season with smoked paprika, cumin, chili powder, salt, and pepper.
  4. Stir in diced red bell pepper and spinach; cook for an additional 2-3 minutes.
  5. Boil diced sweet potatoes in a separate pot until tender (around 10 minutes). Drain well.
  6. In a baking dish, layer cooked sweet potatoes with the turkey mixture. Pour chicken broth over the top.
  7. If using cheese, sprinkle it on top before placing it in the oven.
  8. Bake for 15-20 minutes until hot and bubbly.
